LOBSTER NEWBURG

1 pound lobster meat cut into bite-sized pieces
6 tablespoons butter
3 tablespoons flour
1 1/2 cups half and half
3 beaten egg yolks
3 tablespoons sherry
1 tablespoon fresh lemon juice
paprika

In a skillet over medium heat, melt butter, then stir in flour to form a smooth paste.  Add half and half slowly, stirring constantly until thick and bubbly.  Stir half of the mixture into egg yolks then return to skillet. Mix together and stir in lobster meat.  When lobster meat has heated through (about 2-3 minutes), stir in sherry and lemon juice.  Serve immediately over white rice, patty shells or toast points.  Garnish with paprika.  Some fresh, steamed asparagus goes perfectly with this dish.  Serves 4.

LOBSTER AND MUSHROOM SAUTE

1 pound lobster meat cut into bite-sized pieces
2 sticks butter
1 cup cracker crumbs
1/2 pound fresh mushrooms, sliced
2 cloves garlic
3 tablespoons cooking sherry

Melt 1/2 stick butter and combine it with cracker crumbs.  Melt the other 1 1/2 sticks of butter over medium heat in a sauté pan.  Add garlic and mushrooms and sauté until mushrooms are cooked.  Add sherry and lobster meat and simmer for 1-2 minutes.  Divide lobster mixture evenly into 4 individual ramekins, top with cracker crumbs and place under broiler for 5 minutes or until cracker crumbs brown on top.  Serve with toast points.  Serves 4.

GRILLED MAINE LOBSTER TAILS

5 raw lobster tails (in the shell)
1 stick melted butter
1 clove minced garlic
1 tablespoon lemon juice

Mix together other ingredients in a sauce pan over low heat.  Cut tails down the center lengthwise so that they are butterflied.  Place tails in a grill rack and grill over medium high heat with the meat facing up, basting often with butter mixture.  Turn once or twice as necessary. Lobster tails are done when meat is white instead of opaque.  Total cooking time should be about 10-12 minutes but this will vary with the temperature of your grill.  Serve with grilled vegetables and corn on the cob.  Serves 4.


Lobsters are Low in Cholesterol

Maine lobster is actually low in cholesterol, low in fat and low in calories (without all the butter, of course). The National Institute of Health provided the following statistics (1990 statistics, based on 3.5 oz serving):
