Live Maine Lobster

Our Lobsters Taste Better - Why? First, the lobsters from Maine are considered the world’s finest. Second, ours are day-boat fresh which means the morning before we get our lobsters, they were in the clean, cold water of the Gulf of Maine. We buy directly from fishermen, not big processors. But here’s the key - our Maine lobsters never spend time in a tank with other lobsters (like you see in many restaurants and markets) or in a net pen (where they are held for weeks or months by many suppliers). If they did, their meat would become tainted by ammonia in the urea within only 2 hours. Our lobsters are taken from the ocean and placed directly in an insulated box with seaweed on the bottom (for cushioning and to provide oxygen). They are then trucked overnight to us and kept at 38 degrees. We supply live Maine lobster weighing from 1 to over 5 lbs, the most popular sizes being 1 1/4, 1 1/2, 2 and 2 1/2 lbs. Lobster Cooking - It's Easy! In a large pot, bring to a roiling boil 2-3 inches of water containing 3 tablespoons of sea salt. Keep the lobster calm in a bag in the refrigerator. Before cooking, kill the lobster humanely using a knife to sever the brain just behind the eye stalk. (This is easy as the shell has not yet hardened.) Immediately place the lobster (or lobsters) in the pot, cover and bring back to a roiling boil before starting to time the cooking. Boil, covered, for 11 1/2 minutes. For additional methods to prepare lobster, see our recipes. Low in Cholesterol Lobsters have a reputation for having high cholesterol levels. Not so. (It's the melted butter that has all the cholesterol.) Maine lobster is actually low in cholesterol, low in fat and low in calories (without all the butter, of course).
